Trained in Paris at CEPROC and EPMTTH, Salomon mastered the timeless techniques of French baking, where precision and respect for ingredients define excellence. Pursuing his dream, he moved to New York City to join Maison Kayser, refining his craft in one of the world's most demanding bakery environments.
These formative years shaped his philosophy: that true artistry emerges from patience, discipline, and an unwavering commitment to quality.
Finding warmth and possibility
His path then led him to Miami and Zak the Baker, where the city's vibrant energy and warmth felt like home. The tropical light and cultural mosaic created an energy that felt like living in a perpetual summer — he had found his home.
Miami's spirit of possibility became the backdrop for a new chapter, blending French tradition with the soul of a city that never stops dreaming.
The Trial
During the pandemic, a devastating car accident left him unable to walk, with doctors warning he might never bake again. Returning to France in a wheelchair, he faced the possibility of losing the passion that defined him.

Today, he is back in Miami, sharing his vision of authentic French baking. Through each loaf and pastry, he tells a story of perseverance, passion, and the belief that even after life's greatest trials, beauty can still rise — just like dough, with time, care and faith.
